Coconut Macaroons Recipe


Here's my very easy recipe for yummy coconut macaroons. These are prefect little treats. You can make a large batch to give to family and friends as presents - Just pop them in a clear jar or a clear cellophane bag and tie with a cute ribbon.

Ingredients
  • 500g Organic Desiccated Coconut
    250g fine desiccated coconut and 250g shredded desiccated coconut
  • 395g (1 can) Nestle Condense Milk
  • 1/2 Cup. Brown Sugar
  • 1/2 Cup. Butter or Margarine (At Room Temperature)
  • 2 Eggs
Utensils
  • Large Bowl
  • Oven
  • Fork
  • Measuring Jug
  • Teaspoon
  • 12 or 24 mini cupcake baking tray
  • Mini cupcake patties
Method
  1. Preheat oven to 180 C. and place paper patties in the baking tray.
    If you're not using patties, spray the baking trays with cooking spray.
  2. In a large bowl, combine butter and brown sugar. Cream both ingredients using a fork or a spatula. Mix until the mixture is of a smooth consistency.
  3. Add remaining ingredients in the bowl and fold to combine all ingredients.
  4. Place approximately 1 heaped teaspoon of macaroon mixture into the patties.
  5. Bake for 15-20 minutes (depending on oven strength). or until the tops are golden brown.
  6. Remove from heat and let the macaroons cool before serving.
